Serves 4
Ingredients:
½ Goody Fusilli pasta pack (shape 36)
3 tbsp olive oil
1 onion, chopped
2 garlic cloves, chopped
3 red bell peppers, halved and then sliced after removing seeds
3 zucchini, sliced
2 cup Goody peeled & chopped tomatoes can
3 tbsp dried tomato paste
2 tbsp fresh basil, chopped
1 cup Swiss cheese, grated
Basil for garnish
Steps:
1-Heat the oil in a deep pan and add the onion and garlic. Stir occasionally until tender. Add the peppers and zucchini and cook for 5 minutes.
2-Add the tomatoes, dried tomato paste, basil, and season to taste with salt and pepper. Cover and cook for 5 more minutes.
3-Meanwhile, bring another pot of salted water to a boil and add the pasta. Stir and let it cook.
Reduce the heat slightly and cook uncovered for 3 minutes, until tender. Drain the pasta thoroughly and add the vegetables mixture. Toss gently to mix well.
4-Transfer to a deep dish and sprinkle with the cheese.
5-Cook in an oven for 5 minutes, until the cheese is golden brown and bubbling. Garnish with basil sprigs and serve immediately.
