Serves 4
Ingredients:
1 Goody Spaghetti Pack (Shape 20)
3 tbs olive oil
3 tbs butter 2 tbs parsley, chopped
1 cup almonds, ground
½ cup ricotta cheese
Pinch of grated nutmeg
Pinch of cinnamon powder
1 1/2 cup unsalted yogurt
125ml hot chicken stock
1 tbs pine nuts
Salt and pepper
Parsley sprigs for garnish
Steps:
1-Bring a large pan of water to a boil. Add the spaghetti and 1 tbs of the oil and cook until tender, but still firm to the bite.
2-Drain the pasta, return it to the pan, and add the butter and chopped parsley. Set aside and keep warm.
3-To make the sauce, mix together the ground almonds, ricotta cheese, nutmeg, cinnamon, and unsalted yogurt over low heat to form a thick paste.
Gradually stir in the remaining oil until fully mixed and then slowly stir in the hot chicken stock. Season with salt and pepper to taste.
4-Transfer the spaghetti to a warm serving dish, pour over the sauce and toss together well (see tip below). Sprinkle over the pine nuts, garnish with parsley, and serve warm.
Tip: Use two large forks to toss spaghetti so it is thoroughly coated with the sauce. Special spaghetti forks are available in home appliance stores.
